Yes, CM, You can get away with using Greek yogurt or sour cream but I would suggest reducing the lemon juice a bit because either of those will add some tartness to the dressing. I would also like to know how long this will last in the fridge please. Not to mention – anchovy paste has become my secret weapon for a bunch of other recipes as well. Eggs raw or cooked shouldn’t be a health concern as long as they are from a reputable source….the use of antibiotics on large scale chicken farms has actually increased the incidence of S. Enteritis on these farms – it kills of the natural microflora that usually compete with S. enteritis – leaving the area prime for salmonella. My family loves this dressing.

So I veganized this recipe in hopes it would turn out good and boy oh boy, it did!

Invest in good mayonnaise, Organic Trader Joes Mayo by far beats all Hellmans in the world. We make this salad dressing all the time and just love it!

This is an amazing alternative, and it was really delicious. . Do you have the nutritional information for this? Have to tell you i am VERY unimpressed.

I agree with you Jenn about the amount I would need to make. This does have a thick consistency, but if you want to thin it down, you can use milk (very little, it doesn’t take much) Definitely a keeper. I will be making this over and over again. Then came you and anchovy paste!! Thank you, I felt like a really good chef. Thanks! I halved this recipe and it was delicious. I can’t wait to make this recipe!

I still add more garlic and lemon juice, and replace some plain yogurt for some of the mayo. Each year we pick a country and plan a menu from that place.

Awesome, will never buy store bought again!! I have determined that 1 preparation of this recipe is enough for 2 bags of lettuce. My nephew said it was the best caesar salad he ever ate in his life and that made me very happy! So fast and easy too. You can never go wrong with that. I make it exactly as written, including the anchovy paste.

Hi Lauren, I’ve never used anything but Dijon mustard, but I suspect you could probably get away with brown. This opened a whole new world for me. Anyway, I love Ceasar dressing made this way, it’s perfect!

Now that I know how easy it is to make, I will never purchase store bought dressing again.

It just provides a little bite to the dressing. Using the paste means I’ve stopped wasting any of the little canned anchovies and I can make a smaller amount when needed.

Simply the best and easiest Caesar dressing! I would just continue to do that (bit by bit) until it gets to your desired consistency.

And I found your blog The dressing is soooooo simple and soooo yumm(slurp!) Period. I love to cook and the food here is awesome, but some stuff I miss so much! I have all the ingredients, but no fish sauce:( can I skip? I will continue to fiddle with it and try it again but next time with less mayonnaise.
